Watermelon and Feta Salad

This light and refreshing watermelon and feta salad will be your perfect pick-me-up on a hot day. The sweet watermelon pairs beautifully with the tangy feta – just make sure you buy a seedless watermelon. Serve the salad with a few slices of crusty bread to soak up all of the watermelon goodness.

Watermelon and Feta Salad

Course: Lunch, Salad
Servings: 2
Prep Time: 10 minutes

 

Ingredients:

  • 2-3 wedges seedless watermelon
  • 8 oz. feta cheese
  • 3 cups mixed salad leaves
  • ¼ cup pine nuts
  • 2 tablespoons walnut oil
  • 2 tablespoons balsamic vinegar
  • salt and pepper to taste

Instructions:

  1. Chop the watermelon and feta into cubes.
  2. Wash the salad leaves under cold water and dry them off with the salad spinner. Transfer to the large salad bowl and coat with the walnut oil and balsamic vinegar. Season the greens with some salt and pepper to taste.
  3. Top the salad with the watermelon and feta cubes and pine nuts. Give it a gentle toss and enjoy.

Recipe Notes:

Tip: The walnut oil has a very mild nutty flavor that goes well with the feta, but you can also use avocado or extra-virgin olive oil.
