One Pot Mexican Quinoa

Eating healthy doesn’t mean bland, boring salads for every meal, like this one pot mexican quinoa. There are plenty ways to eat like a king while still filling your body with tons of nutrients. This quinoa is a quick and easy meal that’s packed with tons of protein and nutrient-dense veggies, while also being incredibly tasty.

One Pot Mexican Quinoa

Prep Time: 5 minutes
Cook Time: 20 minutes

Ingredients:

  • 1 onion
  • 3 large tomatoes
  • 2 green bell peppers
  • 2 yellow bell peppers
  • 1 15-oz. can black beans
  • ¾ cup frozen corn
  • 1 cup quinoa
  • 2 cups vegetable stock
  • ½ teaspoon chili powder
  • ½ bunch fresh cilantro, roughly chopped
  • 2 limes, juiced
  • salt and pepper to taste

Instructions:

  1. Chop the onion, tomatoes and peppers.
  2. Add all of the ingredients, except for cilantro and limes, to a large pot and place over medium heat. Season with a generous pinch of salt and pepper and bring the mixture to a boil.
  3. Once the quinoa starts boiling, reduce to a gentle simmer, and cover the pot with a lid. Let the quinoa cook away with the veggies for 15-20 minutes.
  4. Once the quinoa has soaked up all of the liquid, fluff it with a fork and stir in the fresh cilantro and lime juice. Serve immediately and enjoy!

Recipe Notes:

Tip: You can top the quinoa with diced avocado or a dollop of thick Greek yogurt.
