Healthy Apple Pie Pancakes

  • ¾ cup buckwheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ cup almond milk
  • ¼ cup unsweetened apple sauce
  • 1 tablespoon flaxseeds
  • 2 apples
  • 4 tablespoons maple syrup


  1. Preheat a large non-stick frying pan over medium-high heat.
  2. Mix the flaxseeds with three tablespoons of water and set aside.
  3. Add the flour, baking powder, salt, and cinnamon to a large bowl and whisk to combine. Add in the almond milk, applesauce, and flaxseeds and gently mix until combined. Don’t over-mix or you’ll end up with tough pancakes.
  4. Grate the apple with your Indy Chef cheese grater and gently fold into the pancake batter.
  5. Use a ¼ measuring cup to spoon the mixture into the frying pan and cook for 2 minutes on each side.
  6. Stack a few pancakes on a serving plate and drizzle with a tablespoon of maple syrup. Enjoy!

Recipe Notes:

Tip: The flaxseed and water combo is a great egg replacer, but you can make it with equal amounts of soaked chia seeds as well.
