Grilled Zucchini Rollups

These little grilled zucchini rollups are so easy to put together, yet taste really amazing. They’ll be great as a simple party appetizer as well. We’re using a mixture of fresh ricotta and cottage cheese, but you can use just ricotta or even cream cheese.

Grilled Zucchini Rollups

Prep Time: 5 minutes
Cook Time: 10 minutes



  • 1 large zucchini
  • ½ cup fresh ricotta
  • ¼ cup cottage cheese
  • ¼ cup pistachios, chopped
  • ¼ cup mint leaves, roughly chopped
  • 3 tablespoons extra-virgin olive oil
  • salt and pepper to taste


  1. Preheat your oven to 400 degrees F and spray a large baking tray with some cooking spray.
  2. Slice the zucchinis into long strips with your Indy Chef mandoline slicer. Arrange the zucchini strips on the baking tray and season with salt and pepper. Cook for 8-10 minutes, flipping halfway through, until the zucchinis are nicely browned. You can also grill the zucchinis on an outdoor grill.
  3. In the meantime, mix the cottage cheese, ricotta, pistachios, mint, and olive oil in a medium bowl.
  4. Take the zucchinis out of the oven and spoon a tablespoon of the ricotta mixture at the end of each strip, spread the mixture along the zucchini with a knife. Roll up the strips and arrange on a serving dish. Serve immediately and enjoy!

Recipe Notes:

Tip: You can use walnuts or pine nuts instead of the pistachios and replace the mint with some basil or parsley.
