Cheesy Stuffed Peppers

These cheesy stuffed peppers come together in less than 30 minutes and work perfectly with leftover cooked rice. This is one of those set-it-and-forget-it meals, where you mix the cheese stuffing in one bowl and cook the peppers in the oven until ready, so no sweating over a hot stovetop.

Cheesy Stuffed Peppers

Course: Main Dish, Vegetarian
Servings: 4
Prep Time: 10 minutes
Cook Time: 30 minutes

 

Ingredients:

  • 1 ½ cups cooked rice
  • 1 pound frozen spinach, thawed
  • 2 garlic cloves
  • ¼ cup breadcrumbs
  • ¼ cup pine nuts
  • ½ cup feta cheese, crumbled
  • ½ teaspoon dried mint
  • ½ teaspoon dried basil
  • 2 tablespoons olive oil
  • 3 oz. cheddar cheese
  • 4 large bell peppers
  • salt and pepper to taste

Instructions:

  1. Preheat your oven to 400 degrees F and spray a glass baking dish with some cooking spray.
  2. Halve the bell peppers and clean out their insides, discarding the seeds.
  3. Mince the garlic with your Indy Chef Garlic Twist and transfer to a large bowl. Squeeze out all of the water from the spinach and give it a rough chop. Transfer to the bowl with the garlic.
  4. Add the rice, pine nuts, breadcrumbs, crumbled feta, olive oil, mint, and basil to the bowl. Season with salt and pepper to taste and mix well.
  5. Divide the filling between the 8 pepper halves and arrange on the baking dish. Pour a splash of water in the baking dish and cover with aluminum foil. Bake, covered, for 15-20 minutes.
  6. In the meantime, grate the cheddar using your Indy Chef cheese grater and transfer to a small bowl.
  7. Take the peppers out of the oven and top them with the grated cheddar. Bake for another 5-10 minutes, uncovered, until the peppers are really soft and the cheese is all melted and bubbly. Serve immediately and enjoy!

Recipe Notes:

Tip: You don’t have to stick to rice and spinach for your stuffing – try some quinoa, steamed couscous, cooked chicken, or canned beans. Use any kind of peppers you like – red or yellow work the best, but green would be fine too.
