Cheesy Broccoli Quesadillas

These quick cheesy broccoli quesadillas come together in less than 10 minutes and are perfect for both adults and kids. You can enjoy them as a quick afternoon snack, or even as a light dinner on a warm summer night. Use peppers, peas, or zucchini if you don’t like broccoli. Delicious!

We used the Indy Chef Cheese Grater in the making of this recipe

Cheesy Broccoli Quesadillas

Prep Time: 5 minutes
Cook Time: 10 minutes


  • 2 flour tortillas
  • 1 cup broccoli florets
  • ½ cup fresh corn
  • 3 oz. cheddar cheese
  • 2 tablespoons sour cream
  • 1 teaspoon olive oil
  • salt and pepper to taste



  1. Heat the olive oil in a large skillet over medium heat.
  2. Grate the cheddar using your Indy Chef cheese grater and transfer to a small bowl.
  3. Add one tortilla to the hot pan and cook for 30 seconds. Flip and top the tortilla with a bit of the cheddar cheese, followed by the broccoli and corn. Season with salt and pepper to taste and add the remaining cheddar cheese over the veggies. Top with the second tortilla.
  4. Cook the quesadilla for a few minutes on each side, or until the tortillas are nicely browned and the cheese is melted. Cut into 6 triangles and serve with a dollop of sour cream. Enjoy!

Recipe Note:

Tip: You can add a bit of cooked chicken or canned beans for some added protein.
