Bourbon Bananas Foster Crepes

Course: Dessert, Fruit, Snacks
Servings: 4
Prep Time: 10 minutes
Cook Time: 30 minutes

  • 1 large egg
  • ¾ cup milk
  • ½ cup flour
  • 2 tablespoons melted butter
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 4 large bananas
  • ¼ cup butter
  • ½ cup brown sugar
  • ½ cup bourbon
  • ½ teaspoon cinnamon

  1. Add the egg, milk, flour, melted butter, sugar, and salt to a blender and blend until smooth. Place the crepe mixture for 10-15 minutes in the fridge, to let the bubbles subside. This step can be made a few hours ahead.
  2. Heat a large non-stick pan over medium heat and pour in a ladle from the batter. Cook for 30 to 40 seconds, until you see the crepe drying out and releasing from the sides. Flip and cook for another 10 to 15 seconds. Repeat until there is no batter left.
  3. For the caramelized sauce, add the butter, brown sugar, and cinnamon to the pan you used for the crepes and heat over medium heat. Add in the bananas and cook for a few minutes, or until the sugar starts to dissolve.
  4. After a few minutes, flip the bananas and pour in the bourbon. To burn off the alcohol, ignite the pan with a long matchstick and cook until the flames die out. Be very careful when doing this.
  5. Fill each crepe with the bananas foster, making sure you also use all of the bourbon caramel from the pan. Serve warm and enjoy!

Recipe Notes:

Tip: If you’re not comfortable with flambéing (burning off the alcohol), you can skip that step and just caramelize the bananas – they will still taste amazing.
