Blueberry Yoghurt Popsicles

These blueberry yoghurt popsicles are a very nutritious treat that’s packed with antioxidants and protein. You can swap up the berries depending on what’s in season, or what you love really, you could also try this recipe with peaches or mango.  They’re so delicious your kids will love them. They’ll never know that they’re made from yoghurt.

We used the Indy Chef Potato Ricer in the making of this recipe.

Blueberry Yoghurt Popsicles

Course: Snacks
Servings: 6
Prep Time: 10 minutes
Passive Time: 6 hours

 

Ingredients:

  • 2 cups blueberries
  • 2 ½ cups Greek yoghurt
  • 3 tablespoons maple syrup
  • 1 tablespoon vanilla extract
  • ½ teaspoon coarse salt

 

Instructions:

  1. Mash the blueberries with your Indy Chef potato ricer and transfer to a large bowl.
  2. Add in the greek yoghurt, maple syrup, vanilla extract, and salt and whisk until combined. Pour into 6 popsicle moulds and place in the freezer for 5-6 hours, or until frozen. Enjoy!

Recipe Notes:

Tip: You can change up the sweetener depending on what you have on hand – honey or agave nectar would work just as well, or you could use simple syrup in a pinch. You could also use natural yoghurt if you find that greek yoghurt is a little to tangy.
