Banana Blueberry Overnight Oats

These banana blueberry overnight oats are pure delight. While hot and creamy oatmeal makes an amazing cold weather breakfast, you might just want something lighter and more refreshing during the summer heat. Overnight oats have a really silky and velvety texture and are super easy to prepare. Just top them with a banana, your favourite fresh fruit or some nuts for a little bit of crunch in the morning and devour. Make sure you use rolled oats – this ratio doesn’t work with instant oats.

Banana Blueberry Overnight Oats

Course: Breakfast, Vegetarian
Servings: 1
Prep Time: 5 minutes

 

Ingredients:

  • ½ cup rolled oats
  • ½ cup Greek yoghurt
  • ¾ cup milk of choice
  • 2 teaspoons maple syrup
  • ½ teaspoon cinnamon
  • 1 banana
  • ¼ cup blueberries
  • 2 tablespoons walnuts, chopped

Instructions:

  1. Add the oats, yoghurt, milk, maple syrup, and cinnamon in a small mason jar and shake well to combine. Place in the fridge for at least 4-6 hours, preferably overnight.
  2. Before serving, slice the banana and mix with the oats. Top with the fresh blueberries and slivered almonds and enjoy.

Recipe Notes:

Tip: Preparing the overnight oats in a mason jar also makes this breakfast really portable – just take it to work with some fruit and nuts on the side.
