Avocado Toast with Eggs and Sesame Seeds

Avocado toast with eggs has been all the rage for the past few years and with good reason. It’s such a simple, yet delicious breakfast or snack and takes literally no time to put together. This upgraded version of avocado toast comes with a hard-boiled egg for some added protein and a boost of flavor. You can hard-boil your eggs on the weekend, so you can make this toast in no time before going to work or school.

Avocado Toast with Eggs and Sesame Seeds

Prep Time: 5 minutes
Cook Time: 10 minutes


  • 4 sesame rolls, halved
  • 1 avocado
  • 2 eggs
  • 1 tablespoon sesame seeds
  • 1 tablespoon extra-virgin olive oil
  • 1 lemon
  • salt and pepper


  1. Place the eggs in a small saucepan filled with cold water and bring to a boil. Once the water starts boiling, turn off the heat and cover the pan with a lid. Let the eggs sit for exactly 10 minutes and you’ll have perfectly hard-boiled eggs.
  2. In the meantime, lightly toast the rolls and peel the avocado.
  3. Once the eggs have cooled slightly, peel and slice them with your Indy Chef egg slicer. Slice the avocado with the egg slicer as well if the avocado is tender enough.
  4. Layer a few avocado slices onto each sesame roll and top with the eggs. Drizzle over a bit of olive oil and a squeeze of lemon juice. Season with salt and pepper and top with sesame seeds. Enjoy!

Recipe Notes:

Tip: You can also mash the avocado with your potato masher if you prefer to have it spread like a guacamole onto your toast.
